There are only a handful of natural blues, and every one behaves differently.

Spirulina is a protein: vivid, but heat and light tear it apart. Gardenia blue, cleared by the FDA in 2025, is far more stable, but it is set with soy and cleared for only certain applications. Butterfly pea and other anthocyanin blues shift with pH, sliding toward purple the moment the acid moves.

So "swap in a natural blue" is not one decision, it is a fork. The blue that survives a sports drink will die in a baked good. The blue that is legal in a candy may not be cleared for your product. Same word on the label, completely different chemistry, stability, and rulebook.
